Tue, October 5, 2004 - 2:39 PMThe problem you're encountering with the pies not being as good as the slices is simple - the slices are twice-cooked, which both makes them *more* cooked & crisper, with a better-blended flavor; fresh &/or delivery pies tend to be somewhat underdone.
Next time you order, make a point of asking them to cook it "well-done." THEN fire up your home oven to the maximum possible temperature, and re-heat the slices *again* on a cookie sheet (ideally one of the good double-bottomed ones) when they get there - even if you have to let them cool first, so they won't burn.
This procedure does wonders for delivery pie slices - it makes them ~almost~ something a New Yorker would call "pizza." ;-) -

<shrug> In my experience, being twice-cooked *does* help the texture, and often significantly so, especially if you let the slice get cool between cookings. It's axiomatic that baking dries things out; this may not make it *crispier*, per se, but it does make it less soggy.
I agree with the frying pan being a good idea, though. Heats the crust before the topping... I'd make damned sure it was a good pan, though, one that distributes heat evenly. Cast iron, maybe.

We just tried Twin Peaks Pizza on Church/28th for the first time a couple nights ago - the pizza was tasty, but the crust was a bit unexciting.
I used to like Cybelle's - but their cheese or something else in their pizzas always gives me the worst stomach aches and nausea (and I am one of those iron-stomach kind of people).
I used to really like Mozarella di Bufala, but they are SO EXPENSIVE and the cornmeal pizza crust took a nosedive in quality a few years ago (new employees?) and I haven't gone back.
Pizza Inferno on Fillmore/Post (?) is marginal -- the crust is totally BLAH in my opinion. At my table of 7 people, half the stuff we ordered had tough, chewy crust and the other half of our order was thin, crispy Matzo-like crust.
My vote is to find a cheap airfare on Jet Blue and go to Chicago. -

Mon, May 24, 2004 - 12:17 AMI haven't had Pizza Orgasmica for about 3 years or so, but I remember that I thought it was pretty good. I can't remember if it had a cornmeal crust or not. I like different styles of pizza as long as they're done right. I visit Marcello's on Castro on a regular basis and still find it to be some of the best pizza I've ever had, although it can be a bit inconsistent at times. The other place I like is Milano's on 9th Ave. I haven't been there in over a year, but it was my fave for a long time running.

even the most average strip-mall pizza there
beats what you find here..
although chicago has the reputation for
deep-dish pizza, most pizza there is thin-crust.

Tue, June 1, 2004 - 12:22 AMThe Upper Haight Cybelle's (on Parnassus at Stanyan) moved to 9th and Irving anyway. I used to get Monster Slices from there all the time, but now that they're not just across the street, they're a lot less compelling.
The best pizza I've had in SF is at Arinell's on Valencia at 16th. I still cross town a couple times a month to go there, now that I don't work nearby. -

Thu, June 10, 2004 - 11:00 AMAlas, the admittedly reasonably good North Beach in the Upper Haight was once the mighty PAPADOROS!
This was the best pizza in SF I have ever had, by far, consistently for the 10 years or so that I've lived here.
They sold out to North Beach, unfortunately (for me, because obviously pizza tastes differ).
People seem to like the kind of pizza that they grew up with. For a guy from suburban Detroit like me this means round but with a reasonably thick crust. Something like a cross between New York and Chicago.
I liked Capri on Market St. for a while but they are inconsistent. Just tried the new Pizza Box Club in the Inner Mission, and it was COLD and not super exceptional when it got here.
So right now I am ordering Mr. Pizza Man, which is reasonably good, reasonably priced, is consistent and gets here reasonably quickly. But oh, I lament the departure of Papadoro's!!!!! -

Thu, June 10, 2004 - 11:04 AMAah yes, Papadoro's. I liked that place. I live in North Beach, and I really don't care for North Beach Pizza. Capri is really hit or miss, I agree. I liked it better before they remodeled it.
I grew up in Cleveland Heights, Ohio, kind of near the city near Little Italy, and Mama Santa's there was so good...thinnish crust, kind of crispy but not too much, amazing sauce, 16" pepperoni pizza is like $5.50. But you have to pick it up yourself. -

Mon, June 14, 2004 - 5:25 PMI like Golden Boy Pizza, on Green between Grant and Columbus. It's owned by the same people who run Sodini's on Green. The pizzas there are sheet-style, the crust kind of thick but not TOO thick, the sauce tangy and garlicky, the cheese quite generous, and the price fairly reasonable. There is usually a line out the door on Friday and Saturday nights, but during the week it's a good place to pop in for some quick dinner to go, along with a bottle of wine from the liquor store at Grant and Green.

Thu, June 17, 2004 - 6:01 PMI forgot about Golden Boy - yeah, theirs isn't too bad! Front Room pies used to rock my world - but it's been many years since I've been to one. (The one that was near Laguna Honda [long gone now] was my favorite place to take other pizza cynics w/o any preface. I would justify going there by saying I got a discount for knowing the staff [which normally guarantees crummy food piled high, right?] - and then just wait for their reaction of surprise.)
SF is just lousy with mediocre pies. The standard California practice of just piling on more stuff (you name it - burger, burrito, pizza - if it's street food, we have to doll it up...) in the hope of creating some flavor is just sad. If we made pies like we prepared, say, sourdough or grilled fish [that is, simply], we'd probably do OK.
Speaking heretically here, Chicago & Providence seemed to be the only places with pizza reputations that AREN'T ridiculously overrated. (For example, for the serious drop in flavor between fresh & reheated slices in NYC, you may as well be defending Krispy Kremes. [Yes, I tried John's...and Ray's...and a number of other ostensively 'best' places - next trip, I'm trying more of Brooklyn's pies....] And Italy? A different thing entirely - it would be like comparing Mission-style burritos to...pretty much anything in Mexico [or burritos anywhere else in the US].)
I have found it much easier to stick to cuisines that we can do well - then, in the occasional desperate state for pizza, that typical SF slice goes down a lot easier.

Still searching for a replacement to Papadoro's... I am now going through all of the menus that have been stuck on my door and trying new places at random.
Last night I tried Verona (at 30th st. and Church). Pie was a little too cool upon delivery. It took 40 min on a Weds night. A little expensive-- $18 for a 14" with 3 items. Sauce reasonably good. Cheese unexceptional. Crust very tough and hard to chew. Oh, and the driver "didn't have any change."

I grew up in CH as well and remember fondly hiding in the back seat while my less ethnic friends went in for the pie to go.
Arinell is the closest you will find in SF. I remember Mama Santa's being served a little well done. Did you ever try Geraci's on Warrensville?

Escape from NY pizza in Haight: Kudos for the specialty pizzas they make and sizable slices for the price. You can taste the sauce, its served hot but one of the weakest crusts I have ever wrestled with.
North Beach Pizza: Light on the sauce, and heavy on the cheese. That's not a bad thing, but wht not cook it until it browns a bit? It holds up better when cold, what is it with crusts out here? These slises were more manageable, but still soft and floppy.
I'm tempted to hit an UNO's out here, but fear utter disappointment. Where can I get sausage with TASTE? It doesn't seem to be spiced or have fennel seeds for flavor. -

Tue, June 29, 2004 - 12:50 PMI'm a big fan of Serrano's on 21st between valencia and... bartlett (?). huge slices, made fresh for every customer. I lived in new york most of my life, and no, this isn't new york pizza, but it's damn good for SF pizza. They're also pretty quick with the delivery if you're nearby. I start drooling ever time I walk by.

I definitely can say that is one of the closest tasting NYC style pizza in SF. I can't believe how similar tasting their pizza was now if they can only perfect a triangle slice. ;)
I will have to try out Serrano when I'm in the neighorhood again. -

Pauline's pizza has this awesome Tasso on the meat special. I'm surprised nobody mentioned Paradise Pizza. You all should go try Paradise Pizza on the south end of West Portal. This is SF's hidden pizza secret. -
